so true…
i’m on my way to my healthy goal!! yesterday i bought the cutest swimming suit..TWO PIECE and i knew I wasn’t ready for it but I tried it on and I was pleasantly surprised. yes still bunches of work to be done but i can see it and i’m actually looking forward to spring/summer :)
life is going great! i’ve been staying pretty strict with a workout routine. just something everyday if i don’t have time to go to the gym. making healthy choices and now its like i just crave healthy food! its helping a lot :) but what isn’t helping is the face that i work at an ice cream parlor…oh gosh. well i’ll move past it. :) valentines day is tuesday - i’m so happy and lucky that i have a wonderful man to spend it with. school is eh…but all of my classes i want to learn more so that is better than nothing. Amurica and Gimpy (my hermit crabs) are also doing well, and i did my laundry today!! overall..lovin life and fresh smelling sheets :) also, the countdown to 21 booze thing is pretty time consuming…i’ll get back to it asap.

even though its still 77 days away, i’m already so excited for relay for life 2012 (at St. Thomas). i hope that one (or some) of whomever is reading this would find it in their heart to donate to team “got hope?”. the link is at the and of my post and its a $5 minimum. any contribution would help and just incase you didn’t know, all of the proceeds go directly to the American Cancer Society and nothing to the participants, its just RIDICULOUSLY fun :) i hope you can donate!

i’m going to get the next best thing. thats right you’ve guessed it. HERMIT CRABS!! only two…and i think i’m going to name them Fred and Ginger… :) but we’ll see. I really want a pet so desperately…but these little guys are easy to care for and super cute :)


2 oz white tequila
1 oz Cointreau
1 oz Chambord raspberry liqueur
Fill a shaker two-thirds full with ice. Add the tequila, cointreau, and Chambord. Shake well and strain into a chilled martini glass.
drink and enjoy responsibly :)

1.5 oz of pineapple vodka
1/2 oz cranberry juice
2 oz freshly squeezed grapefruite juice
Splash of Cointreau
1/2 cup of crushed ice
Wedge of fresh pineapple, to garnish
Place the pineapple vodka, cranberry juice, grapefruit juice, Cointreau, and ice in a blender. Blend for a few seconds until use slushy. Pour into a wine goblet. Garnish with the pineapple.
who knew salads could be so delicious and filling!! in part of attaining my goal of getting my booty short booty back here is a nom nom nummy salad that is low in calories but high in DELICIOUSNESS!

Salmon Avocado Salad
Ingredients
- 2 (6 ounce) fillets salmon
- 1/4 cup butter, melted and divided
- salt and pepper to taste
- 4 ounces fresh mushrooms, sliced
- 12 grape tomatoes, halved
- 2 tablespoons olive oil, divided
- 8 ounces leaf lettuce, torn into bite-size pieces
- 1 avocado - peeled, pitted, and cubed
- 5 sprigs fresh cilantro, chopped
- 1 fresh jalapeno pepper, chopped
- 2 tablespoons distilled white vinegar
- 1 ounce feta cheese, crumbled
Directions
- Preheat the oven broiler. Line a baking sheet with aluminum foil. Place the salmon on the foil, and brush with 2 tablespoons melted butter. Season with salt and pepper. Broil 15 minutes, until fish is easily flaked with a fork.
- Melt the remaining butter in a skillet over medium heat, and saute the mushrooms until tender.
- Place the tomatoes in a bowl, and drizzle with 1 tablespoon olive oil. Season with salt and pepper.
- In a large bowl, toss together the salmon, mushrooms, tomatoes, lettuce, avocado, cilantro, and jalapeno. Drizzle with remaining olive oil and the vinegar. Season with salt and pepper, and sprinkle with feta cheese to serve.

4 fresh blueberries
4 fresh raspberries
2 teaspoons sugar
2 oz vodka
1/2 oz Chambord raspberry liqueur
2 tablespoons freshly squeezed lime juice
Wedge of lime
Place the blueberries and raspberries in a old-fashioned glass. Add the sugar and muddle with the fruit. Add 4-6 ice cubes and pour in the vodka, raspberry liqueur, and lime juice. Add the lime wedge and stir gently.
*Drink and enjoy :)

1/2 oz blue curaçao
2 oz heavy (double) cream
Fresh mint leaves, to float on top
Fill a shaker two-thirds full with ice. Add the tequila, creme de menthe, blue curaçao, and cream. Shake well and strain into a wine goblet filled with ice. Garnish with the mint leaves.
*21 or older make it, drink it, tell me how it tastes :)
